Smoky Three-Bean Salsa

Ingredients
- 1 (15.8 oz.) can black-eyed peas, rinsed and drained
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (16 oz.) can navy beans, rinsed and drained
- 1 small onion, finely chopped (about 1/2 cup)
- 1 green bell pepper, finely chopped
- 2 small garlic cloves, minced
- 1 (14 1/2 oz.) can diced tomatoes, undrained
- 1/2 cup chopped fresh cilantro
- 1 chipotle pepper in adobo sauce, minced*
- 1/4 cup fresh lime juice
- 1/4 tsp. salt
Directions
- Combine all ingredients in a large bowl; cover and chill at least 2 hours.

If Chipotle peppers in adobo sauce are unavailable, 1 small jalapeno pepper, seeded and minced may be substituted.
