Smoky Three-Bean Salsa

Ingredients

  • 1 (15.8 oz.) can black-eyed peas, rinsed and drained
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1 (16 oz.) can navy beans, rinsed and drained
  • 1 small onion, finely chopped (about 1/2 cup)
  • 1 green bell pepper, finely chopped
  • 2 small garlic cloves, minced
  • 1 (14 1/2 oz.) can diced tomatoes, undrained
  • 1/2 cup chopped fresh cilantro
  • 1 chipotle pepper in adobo sauce, minced*
  • 1/4 cup fresh lime juice
  • 1/4 tsp. salt

Directions

  1. Combine all ingredients in a large bowl; cover and chill at least 2 hours.
  2. If Chipotle peppers in adobo sauce are unavailable, 1 small jalapeno pepper, seeded and minced may be substituted.
