Shrimp Rellenos

Ingredients
- 3 (4 oz.) cans whole green chiles
- 6 cups water
- 3/4 lb. unpeeled, medium-size fresh shrimp
- 1 small red apple, diced
- 1/2 cup (2 oz.) shredded sharp Cheddar cheese
- 2 jalapeno peppers, seeded and minced
- 4 green onions, thinly sliced
- 1/2 tsp. grated lime rind
- 2 tsp. fresh lime juice
- 3 1/2 Tbsp. mayonnaise
- 6 cups mixed salad greens
Directions
- Cut green chiles lengthwise on 1 side; remove and discard seeds. Drain well on paper towels.
- Bring 6 cups water to a boil; add shrimp, and cook 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water. Chill.
- Peel shrimp, and devein, if desired. Dice shrimp.
- Stir together shrimp,. diced apple, and next 6 ingredients. Spoon shrimp mixture evenly into green chiles, and arrange on mixed salad greens.
