Crockpot Cherry Glazed Pork

Ingredients

  • 1 pork loin roast, boneless and trimmed, about 2 pounds
  • 1 can (10 1/2 ounces) condensed chicken broth
  • 1 bunch green onions, with green, sliced in 1-inch lengths
  • 3 tablespoons wine vinegar
  • 1 teaspoon dried rosemary
  • 1/4 teaspoon seasoned pepper (or use regular ground black pepper)
  • 1 cup cherry pie filling, no sugar added or no sugar added preeserves (cherry, apricot, whatever you like)

Directions

  1. Trim pork roast and place in slow cooker. Mix all ingredients except pie filling or preserves and food coloring in small bowl. Pour over roast.

  2. Cover and cook on low 8 hours.

  3. Just before serving, turn slow cooker to HIGH.

  4. Remove roast to warm serving platter.

  5. Mix fruit jam/filling with juices in slow cooker; heat to serving temperature.

  6. Spoon over sliced pork.
