- 8 tbsp butter, at room temp
- 2 tbsp crumbled Stilton cheese
- 1 tbsp port wine
- 2 rib eye steaks

In a small bowl, beat the butter into smooth. Beat in the Stilton and port until well blended. Place the mixture on a small piece of parchment paper and roll into a 3/4-inch cylinder; refrigerate.

Season steaks with salt and pepper and grill to desired doneness. Serve each steak topped with a slice of Stilton butter.
