Ingredients
- 16 plum tomatoes, halved lengthwise
- 2 tbsp olive oil
- Leaves from 4 sprigs thyme
- 32 oz vegetable broth

Preheat oven to 350. Place the tomatoes on a baking sheet cut side up and drizzle with oil. Sprinkle with the thyme and sea salt and pepper to taste.

Bake for 40 minutes, until soft and lightly browned. Remove and let cool slightly.

Transfer to a large pot, add the broth, bring to a simmer, and cook for 15 minutes. Use an immersion blender to puree. Serve warm.
