Spinach Salad with Apricot Vinaigrette

Ingredients
- 1 (10 oz.) pkg. fresh baby spinach
- 1 pint grape tomatoes, halved
- 1 small red onion, thinly sliced
- 1/2 cup chopped dried apricots
- 1 (4 oz.) pkg. crumbled goat cheese
- 1 ripe avocado, peeled and diced
- 1/2 cup chopped pecans, toasted
- Apricot Vinaigrette:
- 1/2 cup vegetable oil
- 2 Tbsp. white wine vinegar
- 2 Tbsp. orange juice
- 2 Tbsp. apricot jam
- 1/2 tsp. salt
- 1/2 tsp. ground coriander
- 1/2 tsp. freshly ground pepper
Directions
- Place first 7 ingredients in a large bowl, tossing gently. Drizzle with Apricot Vinaigrette, tossing gently to coat.
