Meatball Stroganoff

Ingredients
- 8 oz. Best Choice Extra Wide Egg Noodles (1/2 pkg.)
- 1 lb. ground beef
- 1/4 cup quick cooking oats
- 1 egg
- 2 Tbsp. ketchup
- 2 Tbsp. onion, chopped
- 1/2 tsp. salt
- 1 Tbsp. butter or margarine, melted
- 1 Tbsp. fresh parsley, snipped
- 1 can (10 3/4 oz.) cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 1/2 tsp. paprika
Directions
- Preheat oven to 425 degrees. Combine ground beef, rolled oats, egg, ketchup, onion and salt. Mix thoroughly and shape into 24 one-inch balls. Place in 12 × 7 1/2 × 2-inch baking dish, and bake 8 to 10 minute4s or until done.
- Meanwhile, cook noodles according to package directions. Melt butter in same pan, add cooked noodles and parsley. Toss to coat noodles with parsley and butter. Cover and keep warm.
- For sauce: Combine soup and sour cream in medium saucepan. Stir in milk and paprika. Mix well. Fold in cooked meatballs. Cook over medium low heat, stirring frequently, until hot. Serve over noodles.
