Ingredients
- 1/4 cup fresh basil leaves
- 1/4 cup extra virgin olive oil
- 1 to 2 tsp. balsamic vinegar
- Coarsely ground black pepper
- 1 lb. fresh mozzarella cheese, cut into 1-inch cubes
- Red, green, and/or yellow tomato slices, optional
Directions
- Set aside several whole basil leaves for garnish. Using a sharp knife, chop remaining basil leaves. Combine chopped basil, oil, vinegar, and pepper to taste in medium bowl Toss mozzarella cubes gently in herb and oil mixture until cheese is well-coated. Cover and chill for 1 hour or up to 5 days.
- Transfer cheese mixture to a serving dish with a slotted spoon; garnish with basil leaves and, if desired, tomato slices.
