Ingredients
- 3 tbsp lime juice
- 3 tbsp chopped currants or dates
- 2 tbsp vegetable oil
- 1 medium carrot
- 1 lb jicama, peeled
- salt
- torn mint
Directions

Combine lime juice and currants and vegetable oil in a large bowl; let stand 10 minutes. Cut carrot and jicama into matchsticks. Add the veggies into the currant mixture, season with salt and toss to coat. Stir in some mint.
