Beef Stir-Fry with Couscous

Ingredients
- 1-3/4 cups beef stock
- 1 cup couscous
- 1 Tbs. olive oil
- 1-1/4 lbs. boneless beef top sirloin steaks, cut across the grain into 1/4 inch slices
- 1 medium red bell pepper, 1/4 inch thick strips
- 1/2 cup sweet onion, chopped
- 1/2 cup honey dijon barbecue sauce
- 1 Tbs. fresh parsley, chopped
Directions

Bring beef stock to a boil in a saucepan over high heat. Stir in couscous, cover pan and remove from heat. Heat oil in large nonstick skillet over medium high heat. Add beef, half at a time, and stir-fry 1-2 minutes, or until no longer pink. Transfer to a bowl and set aside. In same skillet, stir-fry bell pepper and onion 2-3 minutes or until crisp-tender. Return beef to skillet and stir in barbecue sauce. Cook and stir 1-2 minutes or until heated through. Serve over couscous and sprinkle with parsley.
