Minted Pea and Orzo Pilaf

Serves 4 people

Ingredients

  • 1 1/4 cups uncooked orzo (half of 1 lb. box)
  • 2 Tbsp. butter
  • 1 Tbsp. olive oil
  • 1 small onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 2 tsp. finely chopped, peeled fresh ginger
  • 1 box (10 oz.) frozen peas, thawed
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 cup canned chicken broth
  • 2 Tbsp. fresh lemon juice
  • 1/2 up packed fresh mint leaves, chopped

Directions

  1. Cook orzo following package directions. Drain.
  2. Heat 1 Tbsp. butter and the olive oil in large skillet over medium heat. Add onion, garlic and ginger; sauté until onion is softened, about 10 minutes. Stir in peas, salt, pepper and broth. Bring to a boil over high heat. Stir in cooked orzo; reduce heat to medium-low and heat through, about 3 minutes.
  3. Stir in remaining 1 Tbsp. butter, the lemon juice and chopped fresh mint, and serve.
