Pork Stir-Fry

Ingredients
- 2 Tbsp. peanut oil
- 2 medium onions, peeled and thinly sliced
- 1 celery rib (10 inch), thinly sliced
- 2 cloves garlic, peeked and crushed
- 1 lb. thin 1 1/2-inch long lean pork strips
- 2 Tbsp. dry sherry
- 1/4 cup chicken stock
- freshly ground black pepper to taste
- 2 tsp. cornstarch mixed with 2 tsp, cold water
- 2 Tbsp. soy sauce
Directions
- Heat oil in wok until hot. Add onions and celery; stir-fry 2 minutes or until tender and crisp. Add garlic and pork, stir -fry until pork loses its pinkness, 2 to 3 minutes. Add next four ingredients; stir-fry 30 seconds. Stir cornstarch mixture; add to wok with soy sauce. Stir-fry until sauce thickens. Serve immediately.
