Newman Hall Lasagna

Ingredients

  • 2 lb. sausage or ground beef
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 can (28 oz.) stewed tomatoes
  • 1 can (6 oz.) tomato paste
  • salt and pepper to taste, optional
  • 2 cups (16 oz.) small-curd cottage cheese
  • 2 pkg. (8 oz. each) cream cheese, softened
  • 1 cup (8 oz.) sour cream
  • 9 lasagna noodles, cooked and drained
  • Grated Parmesan cheese

Directions

  1. In a skillet, cook the sausage, onion and garlic over medium heat until sausage is no longer pink; drain. Add the stewed tomatoes, tomato paste, and salt and pepper, if desired.
  2. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes.
  3. Meanwhile , combine the cottage cheese, cream cheese and sour cream.
  4. Spread about 1/4 cup of sausage mixture in a greased 13 × 9 × 2-inch baking dish. Layer with three noodles, a third of the cheese mixture and aa third of the remaining sausage mixture. Repeat the layers twice. Dish will be full. Sprinkle top with Parmesan cheese.
  5. Bake, uncovered, at 350 degrees for 50-60 minutes or until lightly browned. Let stand for 15 minutes before cutting.
