Newman Hall Lasagna

Ingredients
- 2 lb. sausage or ground beef
- 1 medium onion, chopped
- 1 garlic clove, minced
- 1 can (28 oz.) stewed tomatoes
- 1 can (6 oz.) tomato paste
- salt and pepper to taste, optional
- 2 cups (16 oz.) small-curd cottage cheese
- 2 pkg. (8 oz. each) cream cheese, softened
- 1 cup (8 oz.) sour cream
- 9 lasagna noodles, cooked and drained
- Grated Parmesan cheese
Directions
- In a skillet, cook the sausage, onion and garlic over medium heat until sausage is no longer pink; drain. Add the stewed tomatoes, tomato paste, and salt and pepper, if desired.
- Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes.
- Meanwhile , combine the cottage cheese, cream cheese and sour cream.
- Spread about 1/4 cup of sausage mixture in a greased 13 × 9 × 2-inch baking dish. Layer with three noodles, a third of the cheese mixture and aa third of the remaining sausage mixture. Repeat the layers twice. Dish will be full. Sprinkle top with Parmesan cheese.
- Bake, uncovered, at 350 degrees for 50-60 minutes or until lightly browned. Let stand for 15 minutes before cutting.
