Nutty Fruit-and-Cheese Spread

Ingredients
- 1 cup boiling water
- 1/4 cup chopped dried apricots
- 4 cups (16 oz.) shredded Monterey jack cheese
- 1 ( 8 oz.) pkg. cream cheese, softened
- 1/2 tsp. seasoned salt
- 1/3 cup milk
- 1/3 cup golden raisins
- 1/4 cup chopped dates
- 3/4 cup chopped walnuts, toasted
Directions
- Pour 1 cup boiling water over apricots; let stand 30 minutes. Drain well.
- Combine cheeses, salt, and milk in a bowl; beat at medium speed with an electric mixer until smooth. Stir in apricots, raisins, dates, and walnuts.
- Line a 1-quart mold with plastic wrap. Spoon cheese mixture into mold, pressing firmly; cover and chill at least 3 hours. unmold onto serving dish, and remove plastic wrap. Let stand at room temperature 30 minutes before serving.
