Nutty Fruit-and-Cheese Spread

Ingredients

  • 1 cup boiling water
  • 1/4 cup chopped dried apricots
  • 4 cups (16 oz.) shredded Monterey jack cheese
  • 1 ( 8 oz.) pkg. cream cheese, softened
  • 1/2 tsp. seasoned salt
  • 1/3 cup milk
  • 1/3 cup golden raisins
  • 1/4 cup chopped dates
  • 3/4 cup chopped walnuts, toasted

Directions

  1. Pour 1 cup boiling water over apricots; let stand 30 minutes. Drain well.
  2. Combine cheeses, salt, and milk in a bowl; beat at medium speed with an electric mixer until smooth. Stir in apricots, raisins, dates, and walnuts.
  3. Line a 1-quart mold with plastic wrap. Spoon cheese mixture into mold, pressing firmly; cover and chill at least 3 hours. unmold onto serving dish, and remove plastic wrap. Let stand at room temperature 30 minutes before serving.
