Pork with Sweet Potatoes and Peppers

Ingredients
- 2 red bell peppers, cut into chunks
- 1 large sweet potato, peeled and cut into 1-inch pieces
- 1/2 lb. gold or red potatoes, scrubbed and quartered
- 1 to 2 cloves garlic, minced
- Olive oil
- Salt and ground black pepper
- 1 pork tenderloin
- Fiesta Citrus Seasoning
Directions
- Heat oven to 425 degrees. Line a rimmed baking sheet or shallow roasting pan with foil.
- In a medium bowl, combine the bell peppers, sweet potato, regular potatoes and garlic. Drizzle with olive oil and season with salt and pepper.
- Arrange mixture on one half of the prepared baking sheet. Lay pork tenderloin on the other half. Drizzle pork with oil and sprinkle generously with Fiesta Citrus Seasoning.
- Roast, stirring vegetables occasionally, until vegetables are golden brown and tender and pork reaches an internal temperature of 145 to 150 degrees, about 40 minutes. Let pork rest 5 minutes before slicing.
