Indian-Spiced Chicken and Vegetables

Ingredients
- 3 Tbsp. vegetable oil, divided use
- 2 (10 oz.) pkg. Indian Spiced Lentils Sautés by Green Giant
- 8 oz. boneless, skinless chicken breasts
- Handful fresh herbs such as cilantro leaves or basil
Directions
- Heat 2 Tbsp. of the vegetable oil in a large skillet over medium-high heat. Add vegetables and cook, stirring for 1 minute; add the seasoning blend and 1/4 cup water. Cover and cook, stirring occasionally, until vegetables are tender, 6 to 8 minutes.
- Meanwhile, thinly slice the chicken breasts.
- Transfer cooked vegetables to a serving dish; keep warm.
- In the same skillet used to cook the vegetables, add the remaining tablespoon of oil and heat over medium. Add the sliced chicken and cook, stirring frequently until chicken is cooked through.
- Serve chicken with vegetables, sprinkled with herbs.
