Cheesy Sausage and Pea Bake

Ingredients
- 1 Tbsp. olive oil
- 1 Tbsp. unsalted butter
- 3 cloves garlic, minced
- 1 medium yellow onion, diced
- 1 1/2 lbs. sweet Italian sausage, remove from casing
- 3 Tbsp. flour
- 2 cups 1 % low-fat milk
- 1/2 cup low-fat cream cheese
- 1 lb. cooked rotini or ziti
- 8 oz. shredded Italian cheese blend (like Sargento Reduced Fat 4 cheese Italian)
- 2 cups frozen peas
- 1/2 tsp. salt
- freshly ground black pepper
- 1/4 cup grated Parmesan
Directions
- Preheat oven to 350 degrees.
- Heat oil and butter in a large skillet over medium. Add garlic and onion and cook until onion is translucent. Add sausage and cook until browned, breaking apart with a wooden spoon. Stir in flour and milk and mix well.
- Reduce heat to medium-low. Add cream cheese and stir until melted. Remove from heat. Add cooked pasta. Stir in shredded cheese, peas, salt and pepper. Pour into a shallow 3-quart casserole dish. Sprinkle with Parmesan. Bake 25 minutes, or until top is brown.
