Ingredients
- 1 small onion, chopped
- 2 to 3 garlic cloves, chopped
- 1 tsp. olive oil
- 1 cup uncooked long-grain rice
- 2 cups chicken broth or water
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 (4.5 oz.) can chopped green chiles
- 3 Tbsp. tomato paste
- 1/4 cup chopped fresh parsley
Directions
- Sauté onion and garlic in hot oil in a large saucepan over medium-high heat 3 minutes or until onion is tender.
- Stir in rice and next 3 ingredients; bring to a boil. Cover, reduce heat, and cook 20 minutes.
- Remove from heat; stir in green chiles, tomato paste, and parsley.
