Basil and Garlic Tortellini

Ingredients
- 1 (8oz.) pkg. frozen cheese tortellini
- 1 Tbsp. canola oil
- 1 (8oz.) pkg. sliced mushrooms
- 1 (14 1/2 oz.) can no-salt-added diced tomatoes with liquid
- 2 tsp. basil leaves
- 1/4 tsp. garlic salt
- 1/4 tsp. ground black pepper
- 2 Tbsp. grated parmesan cheese
Directions
- Cook tortellini as directed on package. Drain well.
- Meanwhile, heat oil in large skillet on medium-high. Add mushrooms; cook and stir 5 minutes. Stir in tomatoes, basil, garlic salt and pepper. Bring to a boil, stirring occasionally. Reduce heat to low; simmer 5 minutes. Add tortellini and cheese; toss to coat well. Sprinkle with additional cheese, if desired.
