Macaroon Pie

Ingredients

  • 1 cup saltine cracker crumbs, finely crushed
  • 1 tsp. baking powder
  • 12 to 15 dates, chopped 2/3 cup if using pre-chopped dates
  • 1/2 cup chopped nuts
  • 4 egg whites
  • 1/4 tsp. cream of tartar
  • 1 cup sugar
  • 1 tsp. vanilla extract

Directions

  1. Heat oven to 350 degrees.
  2. Combine cracker crumbs, baking powder, dates and nuts; mix well. Set aside.
  3. Beat egg whites with cream of tartar. Gradually add the sugar, beating until stiff but not dry. Fold I cracker mixture and vanilla. Spread in pie plate. Bake about 20 minutes. Pie may not be very brown, just golden and “set” looking. (If you bake it too long, it gets dry.)
  4. Serve with whipped topping or whipped cream.
