Oriental Scallops

Ingredients

  • 1/4 cup cold water
  • 2Tbsp. cornstarch
  • 1 Tbsp. soy sauce
  • 1/2 tsp. salt
  • 1/8 tsp. freshly ground white pepper
  • 2 Tbsp. peanut oil
  • 2 lbs. scallops, halves if large
  • 30 snow peas
  • 2 medium tomatoes, cored and each cut into 6 wedges

Directions

  1. To make cornstarch mixture, combine first five ingredients; set aside. Heat oil in wok until hot. Add scallops; stir-fry 2 to 3 minutes until opaque. Add snow peas and tomatoes; stir-fry 1 minute. Stir cornstarch mixture ; add to wok. Stir until thickened. Serve immediately.
