Lentil Soup

Serves 10 people

Ingredients
- 2T Olive Oil
- 2 - 3 Large Onions
- 3 Carrots, grated or chopped
- 3 cloves garlic, minced
- 3/4 t. marojam, crumbled
- 3/4 t. thyme leaves, crumbled
- 28oz. can of tomatoes
- 7 c. broth (beef, chicken, vegetable
- 1 1/2 c. lentils dried and picked over
- salt to taste
- pepper, freshly ground to taste
- 2T balsamic vinegar
- 1/3 c. chopped fresh parsley or 2T dried
- 3/4 lb. mild sausage (opt)
Directions

Heat oil in large sauce pan

Saute onions, carrots, marojam, thyme

Add garlic

Add tomatoes, broth, lentils, sausage

Bring to boil and simmer for 1 hour

Add salt, pepper, vinegar, parsley

Simmer a few more minutes and serve
