Lentil Soup

Ingredients

  • 2T Olive Oil
  • 2 - 3 Large Onions
  • 3 Carrots, grated or chopped
  • 3 cloves garlic, minced
  • 3/4 t. marojam, crumbled
  • 3/4 t. thyme leaves, crumbled
  • 28oz. can of tomatoes
  • 7 c. broth (beef, chicken, vegetable
  • 1 1/2 c. lentils dried and picked over
  • salt to taste
  • pepper, freshly ground to taste
  • 2T balsamic vinegar
  • 1/3 c. chopped fresh parsley or 2T dried
  • 3/4 lb. mild sausage (opt)

Directions

  1. Heat oil in large sauce pan

  2. Saute onions, carrots, marojam, thyme

  3. Add garlic

  4. Add tomatoes, broth, lentils, sausage

  5. Bring to boil and simmer for 1 hour

  6. Add salt, pepper, vinegar, parsley

  7. Simmer a few more minutes and serve
