Ingredients
- 2 tomatoes, chopped
- cucumber, chopped
- Italian frying pepper, chopped
- 1/4 cup red onion, chopped
- 1/2 cup parsley, chopped
- 3 tbsp olive oil
- 1 1/2 tbsp lemon juice
- 3/4 tsp kosher salt
- pepper to taste
Directions

Combine tomatoes, cucumber, Italian pepper, red onion and parsley in a bowl. Toss with olive oil, lemon juice, salt and pepper. Let stand 10 minutes before serving.
