Peach-filled French Toast

Ingredients

  • 3 fresh peaches
  • 1 (3 oz.) pkg. cream cheese, softened
  • 2 Tbsp. chopped pecans, toasted
  • 1 Tbsp. honey
  • 12 bread slices
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 tsp. vanilla extract
  • 3 Tbsp. butter, divided
  • Powdered sugar
  • Peach syrup (optional)

Directions

  1. Peel peaches. Chop 1 peach and slice remaining 2 peaches.
  2. Stir cream cheese with a fork until fluffy; stir in chopped peach, pecans, and honey. Spoon about 1 1/2 Tbsp. filling onto each of 6 bread slices. Top with remaining slices.
  3. Whisk together eggs, milk and vanilla. Dip each sandwich into egg mixture, turning to coat.
  4. Melt 1 Tbsp. butter over medium-high heat in a large skillet; cook sandwiches, 2 at a time, 3 to 4 minutes on each side or until browned. Repeat procedure with remaining butter and sandwiches. Sprinkle with peach slices and, if desired, syrup.
