Bourbon Chicken and Broccoli Stir Fry

Ingredients
- 1/2 cup light or regular apple juice
- 1/4 cup reduced sodium soy sauce
- 1 Tbsp. molasses
- 1 Tbsp. cornstarch
- 1 1/4 tsp. minced ginger
- 1/2 tsp. minced garlic
- 1 cup carrots, thinly sliced on the diagonal
- 2 tsp. oil
- 1 cup sliced onion
- 1 lb. boneless, skinless chicken breast, thinly sliced
- 4 cups broccoli florets
- 1/4 tsp. black pepper
Directions
- In a small bowl, whisk together first 6 ingredients. Place carrots in a microwave safe bowl, cover with plastic wrap and microwave on high for 1 minute. Heat oil in large non-stick skillet or wok over medium-high heat. Add onion and stir fry for 2 to 3 minutes, or until it starts to turn translucent. Add chicken and cook for 2 to 3 minutes, or until barely done. Add carrots and broccoli to the pan and stir to combine. Pour in the sauce, cover and cook for 3 minutes. Uncover and and stir until sauce coats ingredients and broccoli is tender. Sprinkle with black pepper and serve.
