Basic Chicken Salad

Ingredients

  • 1/2 cup mayo
  • 1/2 cup Greek yogurt
  • 1/2 cup half-and-half
  • 2 tbsp lemon juice
  • 2 tbsp sugar
  • Kosher salt to taste
  • black pepper to taste
  • 2 cups shredded or diced cooked chicken
  • 2 or 3 celery stalks, chopped
  • 3 green onions, sliced
  • 2-3 cups red and green grapes, halved
  • 1/2 cup slivered almonds, lightly toasted in a small skillet until golden brown
  • A small handful of fresh dill, minced
  • Sandwich bread, crossiants or wraps

Directions

  1. First, stir together the mayo, yogurt, and half-and-half. Add the lemon juice, sugar, and some salt and pepper. Stir this together and set it aside for a minute.

  2. Throw the chicken, celery, green onions and grapes into a bowl. Pour 3/4 of the dressing over the top. Toss it together, then toss in the slivered almonds. Add the fresh dill. Give it a final toss and add more dressing.

  3. Wrap it is some bread and serve.
