Broccoli Cornbread

Ingredients
- 2 boxes Jiffy corn muffin mix
- 4 eggs
- 1 cup cottage cheese
- 1 cup chopped onion
- 1 box frozen chopped broccoli thawed
- 1 1/2 sticks butter or margarine
Directions
- Heat oven to 350 degrees.
- In a large bowl, combine the jiffy mix, eggs, cottage cheese, onion and broccoli and mix well. Mixture will be thick.
- Melt the butter in a 9 × 13 inch casserole an. Spoon batter over butter. Bake 45 minutes.
