Broccoli Cornbread

Ingredients

  • 2 boxes Jiffy corn muffin mix
  • 4 eggs
  • 1 cup cottage cheese
  • 1 cup chopped onion
  • 1 box frozen chopped broccoli thawed
  • 1 1/2 sticks butter or margarine

Directions

  1. Heat oven to 350 degrees.
  2. In a large bowl, combine the jiffy mix, eggs, cottage cheese, onion and broccoli and mix well. Mixture will be thick.
  3. Melt the butter in a 9 × 13 inch casserole an. Spoon batter over butter. Bake 45 minutes.
