Ingredients
- 2 Yukon Gold potatoes, cubed
- 2 Sweet Potatoes, cubed
- 2 tbsp vegetable oil
- 1 tsp grated ginger
- 1/2 tsp grated garlic
- 2 tsp curry powder
- salt and pepper to taste
- chopped cilantro, to serve
Directions

Put potatoes in a pot of cold salted water; bring to a boil and cook until tender, 5-8 minutes. Drain and pat dry.

Heat oil in a large skillet over medium-high heat. Add the potatoes and cook, turning, until browned, 8 minutes. Stir in ginger, garlic, curry powder, salt and pepper; cook 1 minute. Sprinkle with cilantro.
