Oyster Fritters

Ingredients

  • 1 cup all-purpose flour
  • 2 tsp. baking powder
  • 1 cup yellow cornmeal
  • 1 tsp. salt
  • 2 large eggs
  • 2 Tbsp. sour cream
  • 1/2 tsp. hot sauce
  • 1/2 cup buttermilk
  • 2 (12 oz.) containers fresh oysters, drained and cut into fourths
  • Vegetable oil

Directions

  1. Combine first 4 ingredients in a medium bowl.
  2. Beat egg, sour cream, and hot sauce with a fork; gradually stir into flour mixture. Add buttermilk and oysters.
  3. Pour oil to depth of 3 inches into a Dutch oven; heat to 375 degrees. Drop batter by tablespoons into hot oil, and cook until golden. Drain on paper towels. Serve immediately with lemon wedges and tartar sauce.
