Oyster Fritters

Ingredients
- 1 cup all-purpose flour
- 2 tsp. baking powder
- 1 cup yellow cornmeal
- 1 tsp. salt
- 2 large eggs
- 2 Tbsp. sour cream
- 1/2 tsp. hot sauce
- 1/2 cup buttermilk
- 2 (12 oz.) containers fresh oysters, drained and cut into fourths
- Vegetable oil
Directions
- Combine first 4 ingredients in a medium bowl.
- Beat egg, sour cream, and hot sauce with a fork; gradually stir into flour mixture. Add buttermilk and oysters.
- Pour oil to depth of 3 inches into a Dutch oven; heat to 375 degrees. Drop batter by tablespoons into hot oil, and cook until golden. Drain on paper towels. Serve immediately with lemon wedges and tartar sauce.
