Thai Chicken- Avocado Wraps

Ingredients

  • 1 (1 1/2 lb.) roasted whole chicken
  • 1/2 cup reduced-fat mayonnaise
  • 1/2 cup chopped fresh basil
  • 2 Tbsp. lime juice
  • 1 tsp. Asian garlic-chili sauce
  • 1/8 tsp. salt
  • 4 (10-inch) flour tortillas
  • 2 avocados, peeled and sliced
  • 1/2 cup chopped cashews
  • 4 lettuce leaves

Directions

  1. Remove bones from chicken, coarsely chop meat.
  2. Stir together chicken, mayonnaise, and next 4 ingredients.
  3. Spread chicken mixture evenly down center of 1 side of each tortilla; top evenly with avocado slices, chopped cashews, and lettuce. Roll up; wrap in plastic wrap. Chill 30 minutes or up to 2 hours.
