Oyster Pilaf

Ingredients
- 3 (12 oz.) containers fresh oysters
- 8 bacon slices
- 1 medium onion, chopped
- 2 celery stalks, chopped
- 1 small red bell pepper, chopped
- 2 tsp. salt
- 1 tsp. pepper
- 2 cups uncooked regular rice
Directions
- Drain oysters, and reserve liquid; add water to liquid to equal 2 cups. Set oysters and liquid aside.
- Cook bacon in a large Dutch oven until crisp; remove bacon, reserving 2 Tbsp. drippings in skillet. Crumble bacon.
- Saute onion and next 4 ingredients in reserved drippings; stir in oysters and half of bacon. Cook 1 minute or until oysters begin to curl.
- Stir in rice and reserved liquid; bring to a boil. Cover, reduce heat, and simmer 20 minutes. Remove from heat; let stand 10 minutes before serving. Sprinkle with remaining bacon.
