Ingredients
- 1/4 cup all-purpose flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 lb. boneless pork, cut into 1 1/2-inch cubes
- 2 Tbsp. vegetable oil
- 1 large onion chopped
- 2 garlic cloves, mined
- 1 can (14 1/2 oz.) diced tomatoes, undrained
- 1 cup water
Directions
- In a large resealable plastic bag, combine the flour, salt and pepper. Add pork, a few pieces at a time, shake to coat. In a pressure cooker over medium heat, brown pork in oil. Add onion and garlic; cook and stir for 3 minutes. Add the tomatoes, water and chilies.
- Close cover securely; place pressure regulator on vent pipe (15 psi). Bring cooker to full pressure over high heat. Reduce heat to medium-high and cook for 8 minutes. (Pressure
