Make-Your- own Energy Bars

Ingredients

  • Nonstick cooking spray
  • 1 cup quick-cooking rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 to 1 tsp. ground ginger
  • 1 egg, beaten
  • 1/3 cup unsweetened applesauce
  • 3 Tbsp. packed brown sugar
  • 3 Tbsp. honey
  • 2 Tbsp. canola or cooking oil
  • 2 7 oz. pkg. mixed dried fruit bits
  • 1/4 cup shelled sunflower seeds
  • 1/4 cup chopped walnuts

Directions

  1. Preheat oven to 325 degrees. Line an 8 x8 x 2-inch baking pan with foil. Spray with nonstick spray; set aside.
  2. Combine oats, flour, cereal, and ginger in a large bowl. Add egg, applesauce, brown sugar, honey, and oil; mix well. Stir in fruit bits, sunflower seeds, and walnuts. Firmly press mixture into prepares pan. Bake for 30 to 35 minutes or until lightly browned around edges. Cool on a wire rack. Cut into bars. Use edges of foil to lift from pan.
