Baked Penne Pasta with Mozzarella

Ingredients

  • 12 oz. penne pasta
  • 1 lb. lean ground beef
  • 1 small chopped onion
  • 1/2 cup shredded carrots
  • 1 (14.5 oz.) can diced tomatoes with basil, garlic and oregano
  • 1 (6 oz.) can tomato paste
  • 1/2 cup water
  • 2 cups shredded part-skim mozzarella cheese, divided

Directions

  1. Heat oven to 350 degrees. Cook penne pasta
  2. according to package directions. Meanwhile, in a large skillet, cook ground beef, onion and carrots

  3. for 8 minutes or until beef is no longer pink and vegetables are softened; drain. Add diced tomatoes, tomato paste and water; mix well.

  4. Coat a 9 × 13-inch baking dish with cooking spray. Drain pasta and combine with meat/tomato mixture and 1 1/2 cups of the mozzarella cheese.
  5. Bake, uncovered, 20 to 25 minutes, or until heated through and cheese is melted. Serve with green peas and soft bread sticks.
