Mediterreanean Pot Roast

Ingredients

  • 2-3 lb boneless beef chuck
  • 1 medium onion, sliced
  • 14.5 oz can diced tomatoes, Italian style
  • 1/4 cup pitted, sliced olives
  • 1 tbsp Worcestershire
  • pepper to taste
  • 1/2 cup crumbled feta cheese

Directions

  1. Cut any fat off the meat. Heat a large skillet and spray with nonstick cooking spray. Brown sides of meat and drain off oils.

  2. Put the onions in the crock pot then place meat on top of onions.

  3. In a separate bowl, mix together diced tomatoes, olives, Worcestershire and pepper. Mix well and pour over meat in crock pot.

  4. Cook on LOW for 6-8 hours. Sprinkle with feta and serve.
