Linguine with Zucchini and Freshy Mint

Ingredients

  • 12 oz. linguine
  • 2 1/2 Tbsp. olive oil, divided
  • 1 tsp. butter
  • 8 cups sliced fresh zucchini
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh mint
  • 1/2 tsp. coarse salt
  • 3/4 tsp. ground black pepper, divided use
  • 1/4 cup freshly grated parmesan cheese

Directions

  1. Cook linguine according to package directions
  2. drain and toss with 1 Tbsp. olive oil.

  3. In a large skillet, melt butter over medium-high heat. Add zucchini and garlic, cook 4 minutes or until softened. Stir in mint, salt and 1/4 tsp. pepper. Combine zucchini mixture with cooked pasta and remaining olive oil; toss to coat. Sprinkle with cheese and remaining pepper.
