Lo Mein Noodles and Broccoli

Ingredients
- 1 (8 oz.) pkg. wide lo mein noodles
- 2 cups broccoli florets
- 2 Tbsp. sesame oil
- 2 Tbsp. water
- 2 carrots, thinly sliced
- 2 garlic cloves, minced
- 2 tsp. minced fresh ginger
- 1 Tbsp. chile-garlic sauce
- 1 purple onion, halved and sliced
- 8 fresh basil leaves, minced
- 8 fresh cilantro sprigs, minced
- 8 fresh mint sprigs, minced
- 3 Tbsp. soy sauce
- 2 Tbsp. fresh lime juice
- 1 Tbsp. coarsely chopped peanuts
Directions
- Cook noodles in boiling water to cover 10 to 12 minutes or until almost tender; drain. Rinse with cold water; drain again.
- Sauté broccoli in oil in a larger nonstick skillet

2 to 3 minutes; add water and next 4 ingredients; cook 1 minute. Stir in lime juice; sprinkle with peanuts. Serve immediately.
