Pork Tenderloin Sandwiches

Ingredients

  • 1/2 cup olive oil
  • 8 fresh thyme sprigs
  • 2 shallots, chopped
  • 2 Tbsp. prepared horseradish
  • 2 tsp. pepper
  • 2 tsp. salt
  • 2 lb. Pork tenderloin
  • Sourdough rolls
  • Thyme Mayonnaise:
  • 1 cup mayonnaise
  • 1 Tbsp. chopped fresh thyme
  • 1 tsp. lemon juice
  • Lettuce
  • Tomato slices

Directions

  1. Combine first 6 ingredients in a large heavy-duty zip-top plastic bag; seal and gently squeeze
  2. to blend ingredients. Add pork; seal and chill 2 hours. Remove from marinade; discarding marinade; place pork on an aluminum foil-lined pan.

  3. Broil 6 inches from heat ( with electric oven door partially open) 5 minutes. Reduce oven temperature to 425 degrees, and bake 20 minutes. Cut into thin slices; chill, if desired. Serve on rolls with Thyme Mayonnaise. Top with lettuce and tomato.
