Green Bean Pasta Salad with Bacon and Pecans

Ingredients

  • 8 oz dry penne pasta
  • 4 oz fresh green beans, halved
  • 4 strips thick-sliced bacon, chopped
  • 1/2 cup mayo
  • 3 tbsp red wine vinegar
  • 2 tbsp sugar
  • salt and black pepper to taste
  • 1/2 cup pecan halves, toasted
  • 1/4 cup thinly sliced red onion

Directions

  1. Cook pasta in a pot of boiling salted water according to directions, adding green beans in the last 2 minutes; drain, rinse with cold water, and drain again. Transfer pasta and green beans to a large bowl.

  2. Cook bacon in a skillet until crisp; transfer to a paper-towel-lined plate/

  3. Whisk together mayo, vinegar, and sugar for the dressing; season with salt and pepper.

  4. Toss pasta and green beans with pecans, onion, bacon and dressing.
