Orange Sections with Chocolate and Raspberry Sauce

Ingredients

  • 1 (10 oz.) pkg. frozen raspberries, thawed
  • 3 Tbsp. raspberry preserves
  • 3 oranges, sectioned and well drained
  • 12 butter, sugar or shortbread cookies
  • 6 (1 oz.) semisweet chocolate squares, melted

Directions

  1. Process raspberries and preserves in a blender until smooth. Pour puree through a fine wire-mesh strainer, if desired, pressing with the back of a spoon; discard seeds. Chill.
  2. Place orange sections and cookies on wax paper; drizzle with melted chocolate. Let stand until dry.
  3. Spoon raspberry sauce onto individual dessert plates; arrange orange sections and cookies on top.
