Farmer Style Chicken

Ingredients
- 3 lb. chicken pieces
- Lemon juice, for coating chicken
- Flour, for dredging chicken
- Olive oil for sautéing
- 1 onion, chopped
- 1 lb. mushrooms
- 1 cup ripe olives
- 1 cup stuffed olives
- 1 cup red wine, optional
- 6 to 7 cups chicken broth
- 1 tsp. thyme
- 1 tsp. rosemary
- 1 tsp. oregano
- Salt and pepper
- Cooked rice, for serving
Directions
- Skin chicken pieces; dip in lemon juice, then roll in flour.
- Sauté chicken in olive oil until brown. Set chicken aside.
- Sauté onion and mushrooms in olive oil.
- Place chicken pieces, onion, mushrooms, olives, red wine (if using), chicken broth and seasonings in a large pot. Simmer until tender. Serve over rice.
