Farmer Style Chicken

Ingredients

  • 3 lb. chicken pieces
  • Lemon juice, for coating chicken
  • Flour, for dredging chicken
  • Olive oil for sautéing
  • 1 onion, chopped
  • 1 lb. mushrooms
  • 1 cup ripe olives
  • 1 cup stuffed olives
  • 1 cup red wine, optional
  • 6 to 7 cups chicken broth
  • 1 tsp. thyme
  • 1 tsp. rosemary
  • 1 tsp. oregano
  • Salt and pepper
  • Cooked rice, for serving

Directions

  1. Skin chicken pieces; dip in lemon juice, then roll in flour.
  2. Sauté chicken in olive oil until brown. Set chicken aside.
  3. Sauté onion and mushrooms in olive oil.
  4. Place chicken pieces, onion, mushrooms, olives, red wine (if using), chicken broth and seasonings in a large pot. Simmer until tender. Serve over rice.
