Ingredients
- 2/3 cup butter, plus more for coating pan, softened
- 3/4 cup sugar, plus more for dusting
- 1/2 tsp. vanilla extract
- 2 eggs
- 1 cup almond flour
- 1/4 cup all-purpose flour (see note)
- Fresh berries for garnish, optional
- Whipped cream, for serving, optional
Directions
- Heat oven to 350 degrees. Coat an 8-inch springform or cake pan with butter and line the bottom with parchment paper; set aside.
- In a mixing bowl, beat butter and sugar with an electric mixer until light and fluffy. Add the vanilla and eggs, one at a time, then slowly add the flours and blend well.
- Pour batter into the prepared pan.
- Bake 30 to 40 minutes or until golden brown.
- Remove from oven, dust with sugar and cool. (Cake will keep, covered at room temperature for up to 3 days.)
- Serve topped with berries and whipped cream, if desired.
