Cucumber-Yogurt Soup with Fresh Dill & Mint

Ingredients

  • 5 cups seeded and chopped cucumbers
  • 1 cup plain Greek yogurt
  • 1/4 cup chopped dill
  • 1/4 cup chopped mint
  • 3 tbsp fresh lemon juice
  • 1 tsp minced fresh garlic
  • salt and black pepper to taste

Directions

  1. Puree chopped cucumber, yogurt, dill, mint, lemon juice and garlic in a blender, then season with salt and pepper; chill until ready to serve.

  2. Garnish servings with diced cucumber, yogurt and dill sprigs.
