Ingredients
- 1 cup diced onion
- 1 tbsp vegetable oil
- 1 tbsp minced jalapeno
- 2 tsp minced fresh garlic
- 2 tsp minced fresh ginger
- 1 cup pineapple juice
- 1 cup finely diced fresh pineapple
- 1/4 cup brown sugar
- 1/4 cup light run
- 1/4 cup fresh lime juice
- 3 tbsp prepared yellow mustard
- 1 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbsp chopped cilantro
Directions

Saute onions in oil in a saucepan over medium heat until softened; add jalapeno, garlic and ginger and cook until fragrant, 1 minute.

Stir in pineapple juice, fresh pineapple, brown sugar, rum, lime juice, mustard, salt and pepper. Simmer sauce until slightly thickened, about 20 minutes.

Transfer sauce to a blender and puree; add cilantro and pulse just to combine.
