Green Bean Slaw with Red Cabbage

Ingredients

  • 3 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 2 tbsp honey
  • 2 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 cups green beans
  • 2 cups thinly sliced red cabbage
  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell peppers

Directions

  1. Whisk together oil, vinegar, honey, salt and pepper for the vinaigrette.

  2. Blanch green beans in a pot of boiling salted water, 2 minutes. Transfer green beans to a bowl of ice water to stop the cooking; drain well. Slice green beans lengthwise.

  3. Toss green beans, cabbage, carrots, and bell peppers with vinaigrette.
