Herb Roasted Chicken Thighs

Ingredients

  • 1/3 cup dry white wine
  • 2 Tbsp. chopped fresh chives
  • 1 Tbsp. chopped fresh parsley
  • 1 garlic clove, minced
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. olive oil
  • 2 tsp. Greek seasoning or herbes de Provence
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 8 skinned and boned chicken thighs

Directions

  1. Combine first 9 ingredients in a shallow dish or large heavy-duty zip-top plastic bag; add chicken. Cover or seal, and chill 4 hours.
  2. Remove chicken from marinade, discarding marinade. Place chicken on a lightly greased rack in an aluminum foil-lined broiler pan.
  3. Bake at 400 degrees for 25 minutes or until chicken is done.
