Oven-Baked Catfish with Tartar Sauce

Ingredients

  • 4 (4 oz.) catfish fillets
  • 1/2 tsp. salt
  • 1/2 ( 2 oz.) bottle hot sauce
  • 1/2 to 3/4 cup cornmeal
  • Tartar Sauce:
  • 1 (8oz.) jar Marzetti slaw dressing
  • 1 1/2 Tbsp. Dijon mustard
  • 1 (3 oz.) jar green peppercorns, drained
  • 2 garlic cloves, pressed
  • Garnish: flat leaf parsley

Directions

  1. Sprinkle fish fillets with salt; place in a large shallow dish or heavy-duty zip-top plastic bag. Pour in hot sauce; cover or seal, and chill 2 hours, turning occasionally.
  2. Remove fish from marinade, and dredge in cornmeal. Place fish on a lightly greased rack in a baking pan.
  3. Bake at 425 degrees for 15 to 18 minutes or until fish flakes with a fork.
  4. Broil 3 inches from heat 2 minutes or until lightly browned. Serve with Tartar Sauce.
  5. Tatar Sauce:

  6. Process first 4 ingredients in a blender or food processor until smooth; chill sauce for 1 hour. Garnish, if desired.
