Roasted Pepper-Tomato Bruschetta

Ingredients

  • 1 (7 oz.) jar roasted red bell peppers, drained and chopped
  • 6 ripe tomatoes, seeded and diced
  • 3 Tbsp. shredded Parmesan cheese
  • 2 Tbsp. chopped fresh basil
  • 1 garlic clove, minced
  • 1/2 tsp. freshly ground pepper
  • 24 French bread slices, toasted

Directions

  1. Combine first 7 ingredients; spoon 1 heaping Tbsp. over each toasted bread slice.
  2. makes 2 dozen
