Prime Rib with Spicy Horseradish Sauce

Ingredients
- 1 (6 lb.) boneless beef rib roast
- 3 garlic cloves, minced
- 2 Tbsp. coarsely ground pepper
- 1 Tbsp. Worcestershire sauce
- 2 (4 lb.) pkg. rock salt
- 1/2 cup water
- Spicy Horseradish Sauce:
- 2/3 cup reduce-fat sour cream
- 3 Tbsp. prepared horseradish
- 2 Tbsp. light mayonnaise
- 1 Tbsp. dry mustard
- 1/4 tsp. salt
- 1/4 tsp. ground red pepper
Directions
- Rub roast on all sides with garlic, pepper and Worcestershire sauce.
- Pour salt to depth of 1/2 inch into disposable aluminum pan; place roast in center of pan. Add the remaining salt; sprinkle with 1/2 cup water.
- Bake at 500 degrees for 12 minutes per pound or until a meat thermometer inserted into thickest portion registers 145 degrees (medium-rare) or to desired degree of doneness. Let stand 10 minutes. Crack salt with a hammer; remove roast, and brush away salt. Let stand 20 minutes. Serve roast with Spicy Horseradish Sauce.

Spicy Horseradish Sauce:
- Stir together all ingredients in a small bowl. Chill one hour. Serve with beef, pork, steamed shrimp, as a sandwich spread, on baked potatoes, or as aa dip for chips or raw vegetables.
