Spanakopita

Ingredients

  • 3 pkg. frozen chopped spinach drained well
  • olive oil
  • scallions
  • onion
  • feta
  • Romano cheese
  • 6 eggs
  • 5 tablespoons finely chopped fresh dill
  • 4 teaspoons finely chopped fresh mint
  • 4 teaspoons ground black pepper
  • 1 lb phyllo pastry
  • melted butter

Directions

  1. Thaw and drain spinach well

  2. Brown onion and scallions in oil and butter

  3. add spinach and spices

  4. In a bowl, add beaten eggs, cheeses

  5. Combine with spinach.

  6. Prepare phyllo. Add spinach mixture.

  7. Brush with butter

  8. Bake in preheated 350 degree oven
